Panzerotti, Closed Italian Pizza











Last night I told myself if today is not raining I'm going to take long walk beside Pfaffikon Sea and enjoy the day. And that's what I did. In the morning I took my trekking shoes and went for a long long walk. Felt so good. It's been a while since I let myself carried away without worrying about my dissertation and research :))

قبل از هر چیز خمیر پیتزا را آماده کنین از اینجا، من واسه این پست از خمیر پیتزا استفاده نکردم بلکه خمیرپیراشکی درست کردم .  بعد مواد اصلی و دلخاه تون رو واسه پیتزا آماده کنین  من مخلوط گوشت چرخ کرده، سبزیجات مثله کدو، قارچ ،فلفل قرمز و هویج رو اماده کردم به این شکل که اول گوشت رو با پیاز تفت دادم  بعد هویج و در آخر  کدو و فلفل قرمز اضافه کردم. قارچ هم جداگونه با کره تفت دادم با کره خیلی کم ، و به مواد اضافه کردم. رب گوجه فرنگی زدم و با ته استکان آب گذاشتم پخته بشه و آبش ۱۰۰% جام بشه .بعد رو خمیر پیراشکی ریختم پنیر پیتزا و چدارروش پخش کردم و خمیر رو بستم. روش رو کم تخم مرغ مالیدم .مخلوط زرده و سفیده رو با هم روی خمیر میمالیم  .  بعد تو فر ۱۸۰ تا ۲۰۰ درجه من بیست تا ۳۰ دقیقهاول  روی خمیر رو فویل میکشم بعد۱۵ تا  ۲۰ دقیقه هم بدون فویل میزارم تا رنگش به دلخواه برسه چم خمیر تو همون ۲۰ دقیقه اول آماده میشه و باقی مواد هم پخته هستن، نوش جان

Ingredients


Pizza dough

Mozzarella cheese

Pizza cheese  (any kind)

Chopped pepperoni

Diced green pepper

1 t. Olive oil

1/2 t. Italian seasoning

Preparation

Roll dough to a 15x10" rectangle on a floured surface. Spread pizza cheese to within 1' of edges. Sprinkle cheese, pepperoni, & peppers over  cheese; roll up dough from long side. Press edges together to seal. Brush top & sides with olive oil; sprinkle with seasoning. Cover & let rise in a warm place for 1 hour. Preheat oven to 350 degrees. Bake 30-35 minutes or until golden brown.

Closed Italian Pizza



Recipe: Pull the dough with your hands to about 8 inches in diameter and over one half of it put the filling and close it with the other half. Brush the top with little tomato sauce flavored with a few drops of garlic infused oil. Sprinkle some semolina on a pizza pan, put the panzerotti over it and bake it in a preheated oven at 400 F. Bake the panzerotti until it rises and when you insert a toothpick in it, it comes out clean. You can, also make a vegetarian panzerotti, if you stuff it with grilled vegetables such as zucchini, eggplant, red peppers, onions, etc.

Ingredients:

•1 envelope active dry yeast

•1 cup warm water, 45°c.

•1 1/2 teaspoons sugar

•2 1/4 tp 2 1/2 cups all-purpose flour

•2 tablespoons olive oil

•1 teaspoon salt
 
 
Put warm water in a cup; sprinkle yeast over water and stir in sugar; let stand for about 10 minutes, or until it begins to bubble.

Combine 2 1/4 cups flour and salt in a large bowl; pour in oil and yeast mixture and stir until a stiff dough is formed. Turn dough out onto a floured surface; knead about 5 minutes, or until smooth and elastic. Add extra flour as needed to keep from sticking to hands and board.



Place in a large bowl greased with shortening or butter; turn dough over to coat the dough well. Cover with towel and let rise in a warm place for about 30 minutes. Dough should double in bulk. Punch down the dough and shape to fit a lightly greased pizza pan which as been sprinkled lightly with cornmeal. Keep dough slightly thick around the edges. Fill with favorite filling and toppings and bake for about 15 to 20 minutes at 220°c.
