Cheesy herb bread



Cheesy herb bread








1 package dry yeast
500 gram all-purpose flour with pinch of salt
375 ml lukewarm milk/water
100 gr cheddar cheese
100 gr parmesan cheese
Pesto (Optional)
fresh leek and parsley
(To make the filling shred the cheese and chop the herbs)
1 egg for brushing





یک بسته ۷ گرم پودر خمیر ترش
۵۰۰ گرم آرد سفید یا آرد با سبوس
و ۱ قاشق چایی خوری نمک
۳۷۵ میلی‌لیتر شیر گرم دمای اتاق , نیم ساعت قبل شیر رو از تو یخچال در بیارین یا ۱۰ ثانیه تو میکرویو بذارین
۱۰۰ گرم پنیر چدار
۱۰۰ گر‌ پنیر پارمسان  
پستو (اختیاری)
تره فرنگی‌ و جعفری تازه
(پنیر هارو رنده ریز کنید و سبزیجات رو هم خورد کنین نه خیلی‌ ریز)
۱ تخم مرغ برای روی خمیر


First of all many thanks to Roxana for the original recipe I have changed a little bit the recipe and used my own combination for the filling.


In a large mixing bowl mix the yeast with a little milk/water. When the yeast has dissolved pour the rest of the milk/water.
Add the flour slowly and until the dough comes clean from the sides of the bowl.
Place the dough in a greased bowl and leave to rest until it doubles in volume, about 2 hours. 

مقداری از شیر را توی ظرفی‌ که میخواین موادتون رو میکس کنین بریزین بد پودر خمیر ترش را اضافه کنین و به هم بزنین بد از ۱۰ دقیقه باقی‌ شیر یا آب را اضافه کنین و آرام آرام آرد رو اضافه کنین اینقدر به هم بزنین که خمیر نرم بشه و به دیواره‌های ظرف نچسبه میتونین کم روغن زتون هم همراه شیر اضافه کنین حدود ۲ قاشق چایی خوری. ظرفتون را کمی‌ چرب کنین خسمیر رو داخلش بذارین و حدود ۲ ساعت رها کنین تا حجمش ۲ برابر بشه . یادتون نره روی ظرف را با حوله نم دار بپوشونین.

Then, divide the dough into 10 balls and flatten them using rolling pin. 
Place about 1 tbsp of each filling on the flatten dough.

بعد خمیر را در بیارین و ورز بدین و به ۱۰ قسمت تقسیم کنین و با وردنه پهن کنین. و روی هر کدام مقداری از پنیر و سبزیجتتون رو بریزین . لبه‌های خمیر را به هم ببندین و با چنگال فرم بدین تا خمیر در زمان پخت باز نشه.



Bring each one to a pocket form and seal the pocket with a fork (or your fingers) and place it in a greased loaf pan. Repeat the processes for the rest.

بسته هارو توی ظرف مستطیل شکل یا  "ترین" مخصوص نان بذارین 



Leave again to rest at room temperature. When risen pour the whole beaten egg over the dough.

تخم مرغ را با چنگال به هم بزنین و روی خمیر تون بریزین یادتون باشه تمام تخم مرغ را 






 Bake in  preheated oven, at 190°c, for about 35-40 minutes. 

توی فر که از قبل گرم کردین بذارین  با حرارت ۱۹۰ درجه سانتی گراد حدود ۳۵ دقیقه
اینم از این نون بسیار خوشمزه و خوشگل نوش جون

Ingredients:
3 cups all-purpose or bread flour, more for dusting
¼ teaspoon instant yeast
1¼ teaspoons salt
Cornmeal or wheat bran as needed.







  • Mix together the dry ingredients.




  • Mix in water until the water is incorporated.




  • Cover with plastic and let sit 18 hours.




  • Cover loosely with plastic and rest for 15 minutes.




  • Transfer to well floured towel or proofing basket. Cover with towel and let rise about 1 1/2 hours.




  • Bake in covered La Cloche or Dutch oven preheated to 500 degrees for 30 minutes




  • Remove cover; reduce heat to 450 degrees and bake an additional 15 minutes




  • Let cool completely on rack.

    Focaccia Bread

    Focaccia Bread






    Ingredients:

    7gr (one package) active dry yeast
    3/4 cup warm water
    3 cups all-purpose flour
    1 teaspoon salt
    6 tablespoons olive oil
    2 tablespoons chopped fresh rosemary

     salt
    Direction:

    1. Dissolve the yeast in 1/2 cup of the warm water, and let sit 10 minutes until bubbly.
    2. In a large bowl, combine the flour, Ts. of salt, yeast mixture and remaining water.
    3. Mix thoroughly with a wooden spoon and then your hands.
    4.Transfer to a floured work surface and knead by hand for a few minutes or until smooth (you can use your kitchen machine).
    5.Place in a well oiled bowl, cover with plastic wrap, and let rise until doubled, about 1 1/2 hours.
    6. Punch down and place on an oiled baking sheet.
    7.Dimple the top surface with your finger tips, and then drizzle with the oil and sprinkle with coarse salt and rosemary.
    8.Preheat the oven to 250 degrees C. Bake about 20 minutes or until golden.

    Variations: Instead of the rosemary, you might add chopped olives to the dough with some Fresh Parmesan on top.
